Kosola saga is cooked in every odiya homes in many styles. But I am posting a very simple and quick recipe of it. For Making Kosola saga fry We need: 1 bunch of chopped Kosola saga or Amarnath leaves 1 chopped potato 1 chopped brinjal Some crushed garlic cloves 1 teaspoon black musturd seeds 2 green chilli 1-2 tablespoons of Mustard oil Salt as per your taste Method Wash the chopped green leafs three times properly on a gas stove take a frying pan heat oil in it add musturd seeds when it starts cracking add green chili and crushed garlic cloves into it. Now add chopped brinjal and chopped potato and cook for 5 min with covered lid on medium flame add kosola saga and fry it with covered lid in low flame till water dries. Your kosola saga or Amarnath leaves is ready to eat. Serve with rice,roti or plain dosa. I love to eat it with plain dosa.
