Mix Vegetables Spinach Curry




A delicious and healthy recipe from my mom's kitchen. So here is the recipe.

we need:
Chopped spinach

1 potato cut into small pieces


1/2 brinjal cut into small pieces

1 chopped carrot

Green peas.

1 small tomato

Crushed garlic cloves

1/4 teaspoon turmeric powder

1 teaspoon cumin powder


Salt as per taste

Puncha phutan for tadaka

Oil for cooking


Method:
Wash all the veggies and spinach properly. Now on a gas stove take a frying pan add 1 tablespoons oil when oil is heated add all vegetables together,salt, turmeric powder and stir fry for 2 mins in low medium flame.

Now add 1/2 cup water and boil all the veggies. When vegetables are properly cooked add chopped spinach, tomato and cook till water dries. When water dries take out the boil vegetables in a bowl.

Take another pan and heat oil in it when oil is heated add pancha phutan when it starts cracking add crushed garlic and fry in low flame till it is slight light brown. Now add boiled vegetables, cumin powder and cook for 2 to 3 min  on medium flame. Mix well using cooking spoon

Your mix vegetables spinach curry is ready. Serve hot with roti or paratha.

For banana steam curry we need: 1  medium piece banana steam 1 brinjal 1 potato 1 tomato Oil Turmeric powder Pancha putan White musturd seeds Poppy seeds Garlic cloves Salt Method: In a small bowl add 4teaspoon of white musturd seeds,4 teaspoon poppy seeds,garlic cloves and water for half an hour then cut the banana stem in round shape and throw the threads out n chop the round pieces in a bowl add the chopped stem n half teaspoon of salt and leave it for 1 hour.
