WATER SPINACH FRY: A Typical Odia Recipe





Being odia i have seen and eaten varieties of foods and those foods are delicious to eat and very easy to cook. One of them is green leaf fries everyday there is a green leaf fry you will get to eat at typical odia homes. Today i m writing one of the green leaf fry known as water spinach and in odia we call it kalama saaga. So without saying anything else lets check its method of cooking.


INGREDIENTS:



WATER SPINACH 

GARLIC CLOVES  

GREEN CHILI

MUSTARD SEEDS

MUSTARD OIL

SALT 

METHOD:



WASH THE GREEN LEAF PROPERLY AND CHOP IT. AFTER THAT ON A GAS STOVE TAKE A FRYING PAN AND HEAT OIL IN IT ON THE OTHER SIDE CRUSH GARLIC CLOVES AND GREEN CHILI TOGETHER. WHEN OIL IS HEATED ADD 1/4 TEASPOON MUSTARD SEEDS, CRUSHED GARLIC AND GREEN CHILI AND FRY IT ON LOW FLAME TILL IT CHANGES TO LIGHT GOLDEN COLOR. THEN ADD CHOPPED GREEN LEAF AND SALT  STIR IT PROPERLY, COVER IT AND COOK ON LOW FLAME TILL WATER DRIES. 

WHEN WATER DRIES OFF GAS STOVE AND TAKE IT OUT IN A PLATE AND EAT IT AS PER YOUR TASTE. 

WE ODIA LOVE TO EAT IT WITH WATER RICE.




Note

I have not used green chili. But green chili gives awesome flavour with garlic to this green leaf fry.

Banana Steam Curry

For banana steam curry we need: 1  medium piece banana steam 1 brinjal 1 potato 1 tomato Oil Turmeric powder Pancha putan White musturd seeds Poppy seeds Garlic cloves Salt Method: In a small bowl add 4teaspoon of white musturd seeds,4 teaspoon poppy seeds,garlic cloves and water for half an hour then cut the banana stem in round shape and throw the threads out n chop the round pieces in a bowl add the chopped stem n half teaspoon of salt and leave it for 1 hour. On the other hand  cut the brinjal and potato into small pieces and keep it in water then  in a tea strainer strain the soaked musturd seeds,poppy seed and garlic n make a smooth paste of it.
